"Picked on 6 September and foot-trodden before being pressed and put 33% into new French oak barrel, 67% into neutral with all the solids. Ambient fermentation followed by 11 months on lees. Matured a further six months on lees in stainless steel before being bottled unfined and unfiltered. 109 cases produced.  Tasted blind. Pale lemon in colour. Smoky reduction, lemon pith, apple and salt on the nose. Crisp acidity that drives through to a complex, evolving, toasty finish. Glorious. Textured. Begs for food and age."

The 2021 Chardonnay Seven Springs Vineyard is flinty and reductive to begin and requires plenty of time and air to reveal deeper tones of nuts, cheese rind, jasmine and peach. The light-bodied palate is focused and bright, while its perfumed flavors unfurl very slowly and suggest this has more to reveal after 2-3+ years in the cellar.
