"The NV Extra Brut L'Assemblage Côte des Noirs Premier Cru is a blend of 70% Pinot Noir and 30% Chardonnay. The nose opens with oven-warm rye sourdough and the snow-white bloom of Camembert, earthy and almost homely. Scents of green sage and Mirabelle follow. The palate is fruity and brimming with Mirabelle bedded on springy sourdough and countered by lovely freshness. This has a light touch, concentrated fruit and smooth, frothy mousse that makes this very lively. Dosage is 5gr/L. Disgorged: December, 2022."
