"Brisson’s farm (and isn’t it great to use the word “farm” in the land of big “houses”) is in Vert-Toulon, in Champagne’s Val du Petit Morin, a continuation of sorts of the iconic Côte des Blancs. His vineyards, almost all of which contain Chardonnay, are family heirlooms, some of which were planted by his grandfather in 1952. The average vine age in his three-ish hectares is 30 years, and he’s been farming organically since 2016 (certified in 2019). This year marks the first year of wines with “Hervé Brisson” on the label."
Dosage 4 g/l, aged for 12 months in barrel, then 15 months on lees in a bottle

"Founded in 1952, Domaine Hervé Brisson is located in Vert-Toulon, in the Vallée du Petit Morin, and is currently managed by Hervé, who inherited the business from his grandfather. The vineyard, with an area of 3.30 hectares of which 3.05 are cultivated with Chardonnay, has an average age of over 40 years and has been managed in Organic Agriculture since 2016. The 2019 harvest was the first AB certified. Vinification of the cuvées in oak barrels without filtration or clarification and few sulphites, with the aim of preserving the aromas of the grapes and raising the expression of the terroir. The use of oak barrels is an important qualitative element for the finish and organoleptic profile of Champagne Hervé Brisson, which have pleasant woody scents ranging from toasted vanilla almonds, toasted bread and cloves, depending on the aging and the degree of barrels toasting."
