"The 2023 Sauvignon Blanc Estate comes from 42 different blocks. Mostly tank-aged, it underwent a 100% wild ferment with more non-Saccharomyces yeasts being used. Aged for six months on the lees, it offers green apple, touches of crushed stone and light grass clipping scents on the nose. The palate is well balanced with good weight, lovely, subtle peppery notes and admirable purity toward the finish. Winemaker Matt Day remarked how they put so much effort into this flagship Sauvignon Blanc, and it shows. Very fine."
