What makes this Champagne so unique is its rarity, its exceptional vineyard source, impeccable winemaking and aging process, and an unwavering commitment to excellence. The first vintage was in 1921, and from then through 2006  it has only been made in 37 vintages. In addition, only around 5,000 cases are typically made per year (although they don't release production numbers publicly, it's probably safe to say that Dom Perignon makes way more in a single vintage than all the Salon ever produced). I can remember the very first taste I had of Salon Champagne, in a restaurant in Reims when I was just getting started in the wine biz and on one of those life altering trips through French wine country. It was the 1973, a wine Galloni recently tasted and wrote "The 1973 Salon is one of the most exotic and flamboyant wines in this tasting. Now at the absolute peak of its maturity, the 1973 graces the senses with hints of orange peel, burnt sugar, butter and smoke. Even with all of its depth and creaminess, the 1973 possesses tons of nuance, not to mention considerable personality."

When I had it it was racy, youthful, precise and laser focused - electric on the palate. It was a profound moment, something I had never experienced before in a wine. I was smitten. When Dom Perginon first tasted his famous bubbly he is rumored to have said "Come quickly, I am tasting the stars!" When drinking Salon, you are drinking the universe! When writing about the 1983, Galloni said "I only wish every Vinous reader could experience the sheer visceral thrill of the 1983, a life-affirming, utterly magical wine that leaves the room in awe."
